Easy One Pan Sausage Meal

I’ll be the first to admit that I am not the best chef. And that’s not because I grew up just eating takeout! Both of my parents were phenomenal cooks and I’d come home to spicy scents and freshly cooked rice often. Unfortunately, the chef genes did not pass down to me.

Once I got to college, I basically survived on the staples: Whatever chicken dish you decidedly “mastered”, ramen noodles, cereal, and the free food from random events on campus. After sophomore year I got even lazier because I ended up meeting this guy who happened to be amazing in the kitchen.

Fast-forward to now. I’m a grad student and part-time blogger who scoffs at the question,  “So what do you do with your free time?” As a 24-year-old adult, it was time to find some full-proof dishes to make. Even for the culinarily challenged like myself. While it’s pretty undeniable that Will is the better chef (even my mom likes to rub it in lol) I want to make sure I can help out in the kitchen every now and then!

That’s why I love easy one pan meals. I throw on my protein of choice, add some vegetables and 6-8 seasonings and BAM! You’re basically Gordon Ramsey. I’ve shared my quick, 30-minute recipe below for my favorite one-pan meal, turkey sausage, potatoes, and broccoli. If you struggle with cooking quality, healthy meals, I promise you this is the way to go! You can also feel free to substitute the golden potatoes for a healthier option like brown rice or sweet potatoes.

Ingredients:

1 package of turkey sausage
1 pound baby red or golden potatoes
8 ounces (1/2 of a 16-ounce bag) petite baby carrots
1/4 cup olive oil
1 teaspoon of each: dried basil, thyme, oregano, and paprika
1/2 teaspoon onion powder
Salt and pepper
Optional: fresh parsley

One Pan Sausage Recipe Instructions:

1. Preheat the oven to 400 degrees F. Line a very large sheet pan with foil for easier clean-up (optional).

2. Halve the baby red potatoes (or cube if they are larger). In a small bowl, mix together all of the seasonings: the dried basil, thyme, oregano, paprika, onion powder, and salt + pepper (I use a heaping 1/4 teaspoon of salt and pepper). Mix together.

3. Place the halved red potatoes and baby carrots on the sheet pan. Pour 2 tablespoons olive oil and half of the seasoning mix on top. Toss to combine and place in the oven for 20 minutes.

4. Remove the potatoes and carrots from the oven and using a spatula push them to one side of the pan. On the other side add in the chopped Eckrich Smoked Sausage and herbs. Add the remaining 2 tablespoons olive oil and remaining seasoning mix. Toss to combine and then toss those ingredients with the potatoes and carrots.

5. Bake for another 10-15 minutes or until the veggies are roasted to your desired preference. Top the dish with fresh parsley as desired.
